My Mom used to make a casserole called chicken & spaghetti for the end of year holiday season. It got to the point that we were having c&s at least once a week for a couple of years she loved it so much. Well, I got totally burned out on it, and refused to eat it for at least 20 years.

Mom passed away eight years ago after suffering from Alzheimer's for about a decade. It’s been a very long time since I’ve had Mom’s c&s. I’ve really had a craving for it for about the past year.

Let me see if I can find it in her recipe box. Mom passed a bit over seven years ago. She was 85 and suffered from Alzheimer's. Thank you for you kindness. smile

Try the above link. I’m pretty sure that this is the recipe that Mom used, or at least quite near it. It has pretty pictures and detailed instructions. This stuff is very creamy. Served warm it’s great for cool evenings for supper.

LOL, That's one of wife's favorite dishes to prepare. The family loves it! She calls it Chicken Tetracini (sp?) It's good stuff up

I’m not surprised. For whatever reason the women folk seem to really like this dish. Back in the 80s I attended Tyler Junior College. The Baptist Student Union there held a Wednesday Lunch every Wednesday at the Baptist Student Center. The local Baptist Churches would provide the meal. You could count on C&S being served at least once a semester. Indeed, there was one spring semester that C&S was served at every Wednesday Lunch all but two Wednesdays.

Which reminds me, does your wife happen to be Baptist? grin
